Türkiye has over +300 soups, and I'm on a mission to try all of them. This is the 6th soup I've made and let me tell you, this one was SO good. Yüksük soup originates from Adana in Türkiye and is a favourite of locals (especially during winter). The name gets its name from the shape of the mantı and chickpeas. Yüksük literally means thimble. You can also add yogurt to it. The best part? It’s super easy to make!

Ingredients
1 tbsp tomato paste
1 tbsp butter
2 tbsp vegetable oil
1 cup frozen mantı (Turkish dumplings)
1 cup cooked chickpeas
1 tsp dried mint
1 tsp salt
1 tsp black pepper
4 cups (1 liter) boiling water
Instructions
In a pot, melt the butter and heat the vegetable oil over medium heat.
Stir in the tomato paste and dried mint, sautéing for a minute until fragrant.
Pour in the boiling water and bring it to a boil.
Add the cooked chickpeas and let them simmer for a couple of minutes.
Stir in the frozen mantı, then season with salt and black pepper.
Let the soup cook for 10-15 minutes, or until the mantı is soft and tender.
Once the mantı is cooked, your Yüksük Çorbası is ready to serve!
Tips from viewers
Drizzle some lemon juice for a nice & refreshing contrast
If using fresh mantı, adjust the cooking time (because it cooks a lot faster than frozen)
Use olive oil instead of vegetable oil for a richer flavour
This soup is a true Turkish classic, and once you try it, you’ll see why. This became one of my favvvvs.
