Turkish Spinach 'Börek'

Whether you're looking for a tasty snack, a light lunch, or a crowd-pleasing party appetizer, spinach börek is sure to satisfy your cravings.

INGREDIENTS

FOR THE BÖREK
  • ready made filo pastry/ yufka

  • olive or sunflower oil

FOR THE SAUCE
  • 1 egg

  • +- 200ml /gr of plain yoghurt

  • OPTIONAL: baking powder

  • sunflower or olive oil

FOR THE FILLING
  • 450-500 gram spinach leaves

  • 2 onions

  • 1-3 red peppers

  • 1-2 green peppers

  • 1 tomato

  • 1 tsp salt

  • 1 tsp ground pepper

  • 1 tsp red chili flakes

  • 110 ml (abt. half a cup) of sunflower oil or olive oil

  • OPTIONAL: one of these: feta cheese/ 'beyaz peynir'/ full fat white cheese

THE TOPPING
  • 1 egg

  • OPTIONAL: seeds: black seeds, nigella seeds, sunflower seeds


INSTRUCTIONS

Filling
  1. Wash your spinach and pat them dry. Cut your spinach and add them to a large bowl

  2. Mince your onions, red peppers and green peppers. Use a vegetable chopper or food-mixer to speed up the process. Now add the minced onions and peppers to the spinach

  3. Peel your tomato, dice your tomato and add it to the spinach

  4. Add your spices to the spinach: 1 tsp ground pepper, 1 1/2 tsp of salt and 1 tsp red chili flakes. You can add more chili flakes if you like the spicy taste

  5. Now add 110 ml (about half a cup) of either sunflower oil or olive oil

  6. OPTIONAL: if you want to add cheese, you can add your feta/beyaz peynir or full fat white cheese into this mixture

Sauce
  1. To a small mixing bowl, add your egg and 200 grams of plain yogurt. You can add about 3-7 grams of baking powder to make the mixture a little lighter, but it's not a necessary step

  2. Mix until you get a homogenous mixture

Topping
  1. In a small bowl, mix one egg until the egg white is no longer visible. You'll need this for the topping

Börek
  1. Preheat your oven to about 200° C or 392°F

  2. Oil a large oven tray with either sunflower oil or olive oil and set it aside

  3. Now take two yufka or filo sheets and start spreading the sauce on top

  4. Then add a part of the spinach mixture on 1/3rd or 1/4th of the sheets and then wrap it in the form of a roll

  5. Put the roll on the greased oven tray

  6. Repeat this process until all your spinach mixture and yufka or filo sheets are finished

  7. Spread and brush the egg that you've mixed all over your spinach rolls/wraps

  8. Top it with black seeds, sesame seeds and sunflower seeds. This step is optional, so you can skip it if you want

  9. Pop it in the oven for about 20-30 minutes or until golden brown
