INGREDIENTS
1/2 cup of quinoa
1 small cucumber
1 tomato
1 red onion or shallot
1 or 2 cups of Arugula
1 tablespoon cottage cheese
salt & pepper to taste
OPTIONAL: hazelnuts or cashew nuts
INSTRUCTIONS
Cook your quinoa according to the package instructions
Chop your cucumber, tomato and onion
To your bowl, add your quinoa, cucumber, tomato, onion, arugula, cottage cheese and mix
Season to taste (salt & pepper) and you can also toss in some hazelnuts or cashew nuts for some extra healthy fats
