Quick & Easy Quinoa Salad

Whether you're meal prepping for the week or looking for a light and refreshing lunch option, this quinoa salad is sure to become a staple in your recipe repertoire.

INGREDIENTS

  • 1/2 cup of quinoa

  • 1 small cucumber

  • 1 tomato

  • 1 red onion or shallot

  • 1 or 2 cups of Arugula

  • 1 tablespoon cottage cheese

  • salt & pepper to taste

  • OPTIONAL: hazelnuts or cashew nuts

INSTRUCTIONS

  1. Cook your quinoa according to the package instructions

  2. Chop your cucumber, tomato and onion

  3. To your bowl, add your quinoa, cucumber, tomato, onion, arugula, cottage cheese and mix

  4. Season to taste (salt & pepper) and you can also toss in some hazelnuts or cashew nuts for some extra healthy fats
