I could honestly eat this every day and never get sick of it.
INGREDIENTS
1 can of chickpeas
lettuce (any kind)
cherry tomatoes
parsley
cottage cheese
nigella seeds
sunflower seeds
chia seeds
olive oil
salt
pepper
chili flakes
INSTRUCTIONS
Chickpeas
Drain your chickpeas and wash them.
In a skillet/ pan, heat some (olive) oil*. Add your drained chickpeas and roast until it turns a bit brown
Season with salt, pepper and chili flakes. I'm using Turkish chili flakes, but feel free to add whichever chili flake you like
Finely chop your parsley and add them to the chickpeas
Salad
Add your lettuce to a bowl
Add your cherry tomatoes (you can cut them in half, but don't have to)
Add your chickpeas and a spoonful of cottage cheese (or more)
Now add the nigella, sunflower and chia seeds. Add about 1/2 tablespoon each
Season to taste and finish off with olive oil
Enjoy!
*you can substitute the olive oil with any cooking oil you like
