Gavurdağı Salatası originates from Gaziantep, a city known for its rich culinary traditions and bold flavours. Recognised as a UNESCO Creative City of Gastronomy in 2015, Gaziantep is home to over 400 unique dishes, blending Turkish, Arab, and Persian influences.
Traditionally, this salad was prepared for special occasions and family gatherings, bringing people together through fresh, locally sourced ingredients. It’s a perfect balance of sweet, tangy, and nutty flavors, thanks to its signature combination of pomegranate molasses, olive oil, and walnuts—all staples of Gaziantep’s cuisine.
Ingredients
4 tomatoes (finely diced)
1 onion (finely chopped)
3-4 sprigs of green onion (chopped)
A handful of parsley (chopped)
Coarsely crushed walnuts
Olive oil (to taste)
Pomegranate molasses (to taste)
Sumac (optional, but recommended!)
Salt (to taste)
Lemon juice (if you don’t have sumac, this adds the needed acidity)
Instructions
Prepare the vegetables: Finely chop the tomatoes, onion, green onions, and parsley.
Mix in the walnuts: Coarsely crush the walnuts and toss them into the salad.
Dress it up: Drizzle with olive oil and pomegranate molasses.
Season to taste: Add salt, sumac (or lemon juice), and mix well.
Let it rest: For the best flavour, let the salad sit for 10-15 minutes before serving, allowing the ingredients to meld together.
