Focaccia without sugar

Fresh out of the oven and bursting with flavour, this homemade focaccia bread will elevate any meal. And the best thing? You can make it too.


INGREDIENTS

  • 320 ml cold water

  • 3 gr dry yeast

  • 400 gr white flour

  • 7-10 gr salt

  • coarse sea salt

  • rosemary

  • nigella/ black seeds

  • olive oil

INSTRUCTIONS

  1. In a large mixing bowl, add half the amount of water and dry yeast and mix

  2. Then gradually add your flour to your bowl

  3. Add the remaining water and your salt and mix until the dough is elastic. Cover and let it rest for 30 minutes

  4. After 30 minutes, fold the dough towards the middle. Do this approx. 6 times

  5. Oil your baking tray with olive oil and place the dough in this greased tray or bowl. Cover it with plastic wrap or a damp towel and let it rise for about 30 minutes. If you want your focaccia to be even lighter & 'thicker', let it rise for about an hour or until it's doubled in size

  6. Oil your hands with olive oil and oil the dough. Using your fingertips, make indentations all over the surface of the dough

  7. Drizzle the remaining olive oil over the surface of the dough, then sprinkle with dried herbs, nigella seeds and a little bit of coarse sea salt

  8. Bake the focaccia for 20-25 minutes, or until golden brown

  9. Remove the focaccia from the oven and let it cool in the baking dish for a few minutes

  10. Slice the focaccia into squares or rectangles, and serve warm or at room temperature
