Satisfy your sweet tooth with this irresistibly fluffy and moist apple cake. Bursting with juicy apple flavour and perfectly balanced spices, it's the perfect treat for any occasion.
INGREDIENTS
For the cake
3 eggs
200 gr butter
8 gr vanilla sugar
200 gr white sugar
vanilla extract
200 gr flour
2 apples
pinch of salt
a handful of pecan and cashew nuts
For the topping
maple syrup
coconut flakes
INSTRUCTIONS
Preheat the oven to 180°C (350°F). Grease a cake pan and set aside
In a small bowl, separate the egg whites and egg yolk. Use a stand mixer to mix to egg whites until they become fluffy. This is key to making your cake fluffy
In a medium bowl, add your (room temperature) butter, vanilla sugar, sugar and grind some vanilla sticks. Mix until combined. Add the egg yolks and mix again
Add a pinch of salt before stirring the egg whites in your mixture. Mix until it becomes one homogenous mixture
In a large bowl, add 200 grams of flour and add your mixture. Mix until combined
Peel and slice 2 apples. I'm using a green and red apple (bio)
Crush your nuts and add them as well as half of the apples to your mixture. We need the rest of the apples for decoration
Add your mixture to your greased cake pan and decorate with the rest of the apples, a dash of maple syrup and coconut flakes
Bake it in the middle of the oven for about 45 minutes or until golden brown
Let the cake cool completely in the pan before slicing and serving
