Delicious Turkish Vermicelli Soup “Tel Şehriye Çorbası”

Türkiye has over 300 soups, and I’m on a mission to try them all! Today, we’re making Tel Şehriye Çorbası, a simple yet flavourful Turkish vermicelli soup. I’m not saying this lightly, but so far, every soup I’ve tried has been my favourite. This one is no exception!
Ingredients:
2 tablespoons vegetable oil
1 tablespoon tomato paste
1 teaspoon dried mint
6 cups (1.5 liters) boiling water
½ cup vermicelli pasta (tel şehriye)
Salt & black pepper to taste
Instructions:
In a pot, heat the oil over medium heat.
Add the tomato paste and sauté until fragrant.
Stir in the dried mint and sauté for a few more seconds.
Pour in the boiling water and let the soup simmer for about 10 minutes.
Add the vermicelli and mix well.
Let it cook over medium heat for another 10 minutes, or until the vermicelli is soft.
Season with salt and black pepper to taste.
While making this, my mom was fasting and craving this soup—the scent filled our kitchen, but we still had a few hours left before we could break our fast!
